Naturis developed ad hoc ingredients such as Pre-gelatinized Functional Rice Flour Y152 of the Best Matchin’ range for the production of Pasta. This flour has been designed for a direct extrusion process:

thanks to its high final jellification, the drying process is shorter as the structure of Pasta is stronger and its brittleness reduced.

Emulsifiers can be left out from the process mixing the Pre-gelatinized Functional Rice Flour Y152 with a corn, buckwheat or pulses flour.
